This vegetable, which is from the same family as rhubarb, is very common in Navarra cooking and gets flattering remarks from those who taste it. rosara puts up the best Navarra cardos, those grown in the Peralta area, well-known for their quality and for being the most tender and the whitest of the whole region. Cardo is a very costly vegetable to clean and prepare. Rosara does it by hand for you with the same meticulous care as with all its products.
