What is this?:
We select the best piquillo peppers and grill them over beech wood. We peel them without water so as not to lose their flavour. It is a very laborious process, but with delicious results. They are filled with a delicate bechamel sauce of boletus edulis mushrooms with sweet-and-sour contrast provided by a apple sauce, also, only 1.8% fat.
